That fantastic smell that greats you as you enter our doors is the aroma of a traditional style of Neapolitan pizzas. The very first pizzas to ever be made, the rules, production methods and ingredients that are used are strictly specified by the Associazione Vera Pizza Napoletana.
As genuine Neapolitan pizzas should be, we make our dough fresh daily, shaped by hand before being cooked right on the stone in our wood fired oven in no more than 60-90 seconds. Traditionally around 12", our pizza is left with a naturally crispy crust, thin and a bit floppy in the middle, charred underneath and on the crust. They are topped in a minimal way, with high quality ingredients, allowing the individual flavours to burst on your tastebuds.
As outlined by the AVPN rules, we use only Italian '00' flour, fresh yeast, Italian extra virgin olive oil, sea salt, San Marzano Tomatoes DOP, fior di latte mozzarella. To compliment these base ingredients, we top them with beautiful cheeses and cold cut meats all coming from Italy, most of them IGP and DOP stamped which means they are in the top 200 protected products in Europe recognised as high quality. Our fresh produce is sourced from the top local producers of Toowoomba like Toni's Super Meats for our fresh meat products, UB's heirloom tomatoes and Westridge Fruit and Veg for our luscious vegetables.
And we don’t just make the best pizza.
We also have traditional Italian starters, salads, pastas and desserts which change daily, weekly, seasonally.
We love a dynamic menu, and our items are cooked with fresh and seasonal ingredients available at that time of the year. Basically, whatever deliciousness we can put our hands on.
